Roast Beef and Cooked Carrots

A recipe courtesy of my family pantry. My family and I love this fix and forget dish because it’s simple and takes less than a minute to put together. I used a boneless top round roast, but any cut will work. The Coca-Cola does a good job of breaking down the roast. The final dish can be served plain or with a simple gravy dressing. The roast’s flavors really pop out between the Coca-Cola and the Onion packet mix.

Ingredient List:

  • 3 pounds of beef roast (any cut—I used a boneless top round roast)
  • 20 ounces bottle of Coca-Cola
  • 1 packet of Lipton Onion Soup and Dip Mix
  • 2 cups of carrots

  1. Place 3 pound beef roast at the bottom the crock pot
  2. Spread Lipton Onion Soup and Dip Mix evenly on top of the roast
  3. Dump the entire Coca-Cola bottle in
  4. Add carrots
  5. Cook on ‘Low’ for 8 hours
